Nan, it needed some ricotta cheese and little heat - jalapenos would work. Otherwise, it is really good.

Still quivering over that taco.
How could a person NOT like something like that.
Notice the salsa was all peppers.
There used to be a place that made giant things like that some place around here a few years ago.
I cant remember for the life of me where it was only that I always went there with another guy I lost contact with.
He knew of some of the best places to eat.

We had a knock at the front door last night and it was our neighbor lady. She had a large carry out container just loaded with lamb, meatballs and chicken chunks. She said they had a business/dinner/conference at Mythos Greek restuarant (one of the best eats in town) and wanted to thank us for being such good neighbors. We had already had supper, but sampled a bite of each and it is wonderful stuff. Thank you Jamie!

That is a killer taco! Exactly what I strive for every time we have taco night.
I saw that video a couple weeks ago. And watched a bunch of his travels. I was a
bit creeped at first but he is genuine. Good gig he has going.

The taco looked good to me until he put habeneros on it, and I happen to like many different salsas, most all pepper pepper salsa is too hot for my taste.

If I wasn't too chicken to go to Mexico, I would go there in a heartbeat. I don't like their hands all over the food though. Yuck!

That's what the habanero peppers are are for.

I was going to make barbacoa but found two nice pork bellies instead.
So I got them and some carnitas.
Going to experiment with pork belly plait Mexican Style this weekend.

This whole carnitas thing for tonight may come to an end.
I had no idea it was this late because I was tied up at work again.
Not that I wont continue cooking them but it may be in a crock pot.

I want to get to work very early tomorrow like 5:30 AM and cut some security wire and re run it to the building it needs to go to a different way.
It is in an active school.
The sooner I get it done the sooner I can get off work but it has to be done before I get off work.

An egg sandwich may be in order tonight.

The project went off whiteout a hitch and was finished by 12:00 noon.
Boss showed up and was flabbergasted we were making the last connections and it all tested okay.

On the way home I stopped at the store and picked up.
Cilantro.
Fresh jalapenos.
Key limes.
Lime juice.
Roma tomatoes.
Avocados.
Might as well do the carnitas up right with some Charro beans too.
