I have never seen this in a restaurant before but it is darn good.
The beans I have been eating on top of corn tortillas with lettuce.
Homemade chili from my own homemade chili powder.
On top of fried corn tortilla strips.
With homemade pickled jalapeno peppers.
I could add more to this but I am just eating what I have around the house and leftovers.
Who would have thought leftovers could look and taste so good.

What are those sticks under the chili? LOL, about that neighbor, when someone would make some holier-than-thou remark my Mom always said, "Well, pin a rose on you !"

The sticks are the fried corn tortilla strips.
You buy fresh corn tortillas stack them up and slice thin strips.
Then you fry them until they just start to turn color.

They go great in a taco salad.

No guys you may have misread what I said.
I didn't want to go into detail about it.

This man and his wife are truly what they are and if he said it didn't happen then he only forgot about mouthwash.
I gave him some jalapeno jelly awhile back and he loved it even though he thought it was hot.
I told him I was disappointed that it wasn't hot enough.

I can say that I have mystified them about things.
They have never met anyone like me in their life and he told me in his 70 some odd years he has never had a better neighbor.

I'm getting worried about him.
I used to see him out all of the time in good weather but I dont see him near as much anymore.

Maybe I fell asleep in cooking school are something but I tried something I have never tried before.
That is crispy baked corn tortillas in the oven.
I normally dont care for baked things like potato chips but I can easily live with these.
And they are so easy to make it is like falling off a log.
You can also make them in any shape you want including taco shells and bowls.

How long and at what temp? I like the crispy ones too, but I've never baked them to get them that way.

I did mine last night at 500 that was too hot.'
400 would be better and I didn't time it but just as you start to see them turn take them out.
They will continue dry out and crisp up.
If you want to make tortilla bowls you will have to steam then a bit to soften them up.
Then set them in a muffin pans or some sort of oven grade bowl for a form.
I laid mine flat on open racks, a 30 inch oven should holed 12 on each rack.

Nan bread from Indian cuisine is also very good, on equal footing with our flour creations. Their samosas can hold their own vs. our empanadas . Their curries and vindaloos are equal to our moles and barbacoas/cochinita pibil.

As a matter of fact, I'm gonna go to my favorite frituras joint. Aptly named, El Sinaloense. They sell tostadas/tacos dorados (beef/chix/chorizo/potato), tamales, pozole, caldo de res, enchiladas, all done Sinaloa style, which means spicy and with an 8 oz cup of piping hot consomé, poured on top.

So the order is: fried maize receptacle, beans, flesh, finely diced mix of cabbage and lettuce, lemon infused red onion slices, sliced avocado and cucumber, julienned carrots, "media crema" which is NOT sour cream. You then pour the piping hot bouillabaisse-type liquid, you top it with a few drops of hot sauce and then a couple of drops of freshly squeezed Mexican lime.

Rolled tacos with guac are just depressing when I'm in the US.

EDIT: Meal consisted of Sope de Pollo, Taco de Papa, Tostada de Pollo, Frijoles Rancheros. Agua de Cebada (barley).

It really bothers me they dont use more lemon and lime here, at least I do at home.
