I have a smallish tomato this year that is very easy to hollow out. We stuff them with a piece of fresh mozzarella, or cottage cheese with a bit of Mrs. Dash sprinkled on. Gourmet!

Sauteed broccoli, and cauliflower chunks and sugar snap peas over rice with a home made Parmesan Alfredo sauce.

lol, Don we made something like that today. Rice with small bite sized chicken, two cans of cream of soup, one can of nacho cheese sauce, broccoli, black beans, corn, onions, and spices.

It is a great meal. It is very filling but fairly low in unhealthy stuff. The only thing I would like to have with it is garlic toast, but I haven't eaten white bread in many months.

I had some left over chili from lunch and used it to make some chili-mac for supper. Cheap and very filling, but likely had a low health factor.

It has been rainy and cool here for three days. We thought about cooking chili for dinner. It just seemed right for the weather, but we decided to wait until it actually gets cold outside so we had the following instead.



Inexpensive rotisserie chicken with corn on the cob and cantaloupe for dinner. The chicken cost a little over four bucks and the corn was twenty cents per ear from Walmart. I think the cantaloupe was less than two bucks from Aldi. Not bad to feed two people with some of everything left for lunch tomorrow.


Easy method for cooking corn on the cobb in the microwave.


Place dinner plate in the microwave and fill it about 1/2 full of water.
Place an ear of corn with the husk still on it in the plate.
Cook the corn for three minutes on full power
Using a towel or oven mitt, rotate the corn top to bottom and cook three more minutes
Using towel or oven mitt, remove the corn from the microwave and place it on a cutting board.
With a sharp knife, cut the stalk end of the corn off slightly into the corn.
With the towel, grab the silk end of the very hot corn and squeeze it hard like a tube of toothpaste. The husk and silk come off easily.
Roll it in butter and eat it.

Cheap eaten really knows no limit to how many you are feeding. That meal I described above in post "7356 fed a family of 6 for two days and cost below $10. The first day, we forgot the nacho cheese sauce - and it tasted odd.

As much as I would say that we are eating healthy - we are eating cheap.

Worth, hotdogs and Ramen - I more than understand.

I told the guys at work and they were flabbergasted.
Wieners ramen and two shots of whisky to drink to be exact.

Last night it was a bowl of microwave HEB chill and stale corn chips and straight to bed.
I put in close to 80 hours this week.
Cold pizza we ordered at noon we didn't eat till 3:30 today will be all I eat today.

At Steak & Shake, my mum & I got the 1/2 price milkshakes and split 2/$3 grilled cheese sandwiches.
