Default Need help w/Beets

I have been going nuts looking for the recipe for canned spiced, shredded beets. They were the most amazing beets ever and I want to can some up but I can't find a recipe for them. Anyone have a recipe to share please?

Spike, here is a tested recipe for pickled beets. You can add whatever dried spices you want to it. Keep the vinegar/water ratio. If you want a less acid flavor, just add a bit more sugar.

There's a Polish Shredded Beet recipe that I want to try some day. You didn't say what spices were in the one you are looking for, so no idea if this is even close, but it sounds good.

I don't have a recipe, but the two already posted sounds very good.

I really love beets, but I'm the only one in the family that does.

OH EM GEE!!!! I bet that is it!!! Even if that isn't it, I am Polish and HAVE to make those!! But I LOVE LOVE LOVE beets!! Now I have 2 recipes to make and try! So excited.

Have yet to meet anyone with Polish blood who doesn't love beets, my husband included. I had never had them until he talked me into trying roasted beets at a (half Polish) friend's house about ten years ago.

I make 9 pints at a time in the canner, so I can't guesstimate how many beets I use - I just fill my soup pot with about 1/2 bucket of beets. I've used this recipe since the 90's, so I know it's good. (And easy to remember). I grow Cylindra beets for pickling.

4 cups cider vinegar
4 cups water
4 cups sugar
1 tsp. Ground allspice
1 tsp. Ground cloves
1 tablespoon Cinnamon

Boil the beets, slip the skins, slice the beets. Fill the pint jars with beets.
Boil the ingredients. Recess for 10 minutes, depending on altitude.

I cant count how many beets we put up every year regular and pickled.
I have no idea where it came from as I am not Polish.
We ate beets like folks eat french fries now.
Root crops in general were eaten in great quantities in our home.

It is really sad to see our food supply getting away from the very crops that make kids strong and healthy.
