I like a plain old tomato sandwich too. I like a BLT as well. But I think my favorite sandwich of all is a tomato and avocado sandwich on white bread. No mayo needed because the avocado is already creamy enough. No salt, but a little pepper and I am good to go.

Tomato sandwich with duck or goose fat (schmaltze) spread on the bread.

I got my genes from the wrong side of the family! Males on my father's side always died of heart and stroke issues around 68. On my mother's side they lived well into their eighties. My grandmother on that side always fried in home rendered lard, used lard in baking, and cooked greens with at least a half inch of grease from fatback on the top!

Now, despite taking cholesterol and heart meds since my late twenties they still say I have a year to a year and a half despite surgeries and four rounds of meds a day. My dad was a vegetable for two years and my brother has been for three. I've had two strokes plus stints. You can't beat genes.

When I see folks in Europe eating lardo and elsewhere eating seal fat, seal fat ice cream and blubber from whales I can't help but think that our scientists are missing something.

Here I do everything to separate out fats when I cook!

How about tomato and lox?

I like mayo, cause I toast the bread nice n crisp ( not burnt ). A thin spread of mayo on it softens it a bit and makes it tastier. The add you filler. ( tomato, bacon, ham, cheese, spice ...whatever ).

Down here mayo, like barbecue flavorings and even selecting the proper sides, is almost like religion. I like Hellmans, in NC they tend to prefer Dukes, my wife was raised on Blue Plate. I have often made my own, and there are many recipes for Hellmans online, but it's just too much hassle to clean everything after. Bread, however is another matter, I detest white breads that have a coarse grain and non-white breads like my preferred types for other uses that are whole grain just are not the same for a mater sammich!

Sandwiches with additional items are a different, if genre altogether.

Like livermush, brand and preparation preferences are everything.
