Diabetic Friendly


Green Beans with Garlic and Lemon
- 5g Carbs, 2g Fiber

From: South Beach Diet

Prep Time: 15 min
Cook Time: 5 min
Total Time: 20 min
Servings: 8

1 lb beans, green trimmed
1 Tbsp extra-virgin olive oil
3 cloves garlic minced
1 medium lemon grated peel (use 2 tsp of zest) PLUS juiced (use 1 Tbsp)
Salt to taste
Peppercorns, black freshly ground, to taste

MAKE-AHEAD: Beans can be blanched up to a day in advance.

Bring a medium saucepan of salted water to a boil. Add beans, return
to a boil, and cook until crisp-tender, about 2 minutes. Drain in a
colander and rinse under very cold water to stop cooking. Drain again
and pat dry.

Heat oil in a large nonstick skillet. Add garlic and cook until softened,
about 1 minute. Add beans and zest; cook, stirring occasionally, until
beans are warmed through, about 2 minutes. Stir in lemon juice and season
to taste with salt and pepper. Serve warm or at room temperature.

Servings: 8
