Shipwreck Pie
Story from a elder neighbor, when the larder is near empty, early Spring, when the new seed is just being planted, you use up just about anything you have into your big skillet in layers like a pie. My up-dated version is using what's in the fridge. Mandoline potato crust. Onions, any left-over grain. This one I had some lentils and chickpeas from making humus. Lots of chopped veg, olives, sun-dried toms...baked in the oven, then fresh cod fillet, back in oven to finish. Cod cooks quick. Fat blunt end of a skewer should feel resistance, then done when it pushes right through. (checking every couple minutes after the first 10) |

Friends are visiting.
Harvested my first sugar baby watermelon off the plant yesterday. It weighs 17 pounds. Oh my gosh I had that thing hanging on a trellis. It's been in the refrigerator getting nice and cold. I'm making a fruit salad this morning with watermelon the queen of the show, blueberries, seedless green grapes, and walnuts included. I'm cooking sausage, bacon, eggs (scrambled or fried) and some toast. Served with some hot tea and mimosa. Should be a great breakfast this morning. ![]()
